Here is my post about purple sweet potatoes per Ms. Beverly Johnson’s request Purple sweet potatoes have a very distinct taste. We eat orange sweet potatoes plain, but the purple ones not so much. They can be steamed and made into a very thick warm “juice” or can be steamed with the rice, which is what I did for dinner the other night.
I was looking up the benefits just for this post. I mean, I knew it was good for me because it was purple. . . but I found they are full of cancer fighters, anti-inflammatory and anti-aging properties.
I love purple sweet potatoes! They are so hard to find here. There’s a Japanese variety that is white-skinned with purple flesh.
I haven’t seen those. I seriously LOVE all the variety of fresh fruits and veggies here!
Thanks Haley. They are very pretty. Could they be baked just like the regular orange sweet potatoes and eaten with butter? I am going to look at Farmers Market for some of them here.
Let me know if you find some and what you think! They do have quite a distinct taste so I’m not sure if they would be good with butter, but seriously. . . what’s not good with butter right? haha
