Purple Sweet Potatoes

Here is my post about purple sweet potatoes per Ms. Beverly Johnson’s request :) Purple sweet potatoes have a very distinct taste. We eat orange sweet potatoes plain, but the purple ones not so much. They can be steamed and made into a very thick warm “juice” or can be steamed with the rice, which is what I did for dinner the other night.

I was looking up the benefits just for this post. I mean, I knew it was good for me because it was purple. . . but I found they are full of cancer fighters, anti-inflammatory and anti-aging properties.

  1. I love purple sweet potatoes! They are so hard to find here. There’s a Japanese variety that is white-skinned with purple flesh.

  2. Thanks Haley. They are very pretty. Could they be baked just like the regular orange sweet potatoes and eaten with butter? I am going to look at Farmers Market for some of them here.

    • Let me know if you find some and what you think! They do have quite a distinct taste so I’m not sure if they would be good with butter, but seriously. . . what’s not good with butter right? haha
